120g beef, sliced
1 teaspoon of Thnot Organic Palm Sugar
1/2 teaspoon of salt
1/2 teaspoon of crushed Kirum black pepper
1/2 teaspoon of chili sauce
1 teaspoon of vegetable oil + extra for cooking
1 tablespoon of soy sauce
1 tablespoon of oyster sauce
2 cloves of garlic, crushed
1/2 an onion, chopped
A few leaves of lettuce
1 tomato, sliced
Rice
For the pepper sauce:
1 teaspoon of Thnot Organic Palm Sugar
1/2 teaspoon of salt
1/2 teaspoon of crushed Kirum black pepper
1/2 teaspoon of crushed garlic
1/4 of a lime

Method

Mix sugar, salt, pepper, oil, soy sauce, oyster sauce and garlic in a mixing bowl, add the meat and coat thoroughly. Marinate for 10-15 minutes.
For the sauce: mix salt, sugar, pepper and garlic in small individual bowls.
Add some oil to a wok, sauté the garlic until brown and add the beef, stir fry about 1 minute, until cooked.
Mix in the chili sauce according to your taste.
Prepare serving plates with steamed rice and a bed of lettuce.
Just before serving, squeeze the juice of 1/4 lime into the pepper sauce and stir lightly.
Serve the meat over the lettuce with some pepper sauce on the side.

Asian Salad

A Cambodian green mango salad with dried shrimp, herbs, and Kirum palm vinegar dressing.

1 medium size green mango, skin peeled and shredded
1 tablespoon Kirum Organic Palm Vinegar
1 tablespoon fish sauce
1 teaspoon Thnot Organic Palm Sugar
¼ teaspoon salt
½ cup dried shrimp, pre-soak in water about 15 mins
½ cup dried fish
1 teaspoon chopped fresh bird's eye chili (optional)
1 small shallot, thinly sliced
¼ cup fresh chopped herbs (mint, green onions, saw tooth, or basil)
2 tablespoons chopped roasted peanuts

Method

Heat a small pan and lightly oil it.
Add dried shrimps, dried fish and give it a quick stir.
Fry it to give them a nice crispy texture.
Transfer to a mortar and pestle and lightly pound it to break up the fibers. This will allow the shrimp to absorb the flavors from the dressing but also retain that nice and crunchy texture. Set aside.
In a large bowl mix together lime juice, fish sauce, sugar, salt and fresh chili.
Add shallots, green mango, dried shrimp and fresh herbs.
Toss the salad to combine.

1 tablespoon Thnot Organic Palm Sugar
3 tablespoons Kirum black Kampot Pepper
2 tablespoons soy sauce
2 garlic cloves, chopped
1.5 tablespoons Kirum red Kampot Pepper
The juice of one lime
300g of beef, cut into cubes
2 tablespoons of olive oil
1 onion, minced
1 tablespoon of fish sauce

Method

Mix together the palm sugar, the Kirum black Kampot Pepper and Kirum red Kampot Pepper (chopped), the garlic, the lime juice and the soy sauce in a bowl. Add the pieces of beef. Let marinate for at least one hour in the fridge.

Heat up some olive oil, then stir-fry one minced onion. Add the marinated beef and let it cook. When ready add a tablespoon of lime juice and the fish sauce. Serve with Cambodian jasmine rice.

Ingredients

3 bananas, fully ripened and mashed
½ cup of Thnot Organic Palm Sugar
⅓ cup honey (best if wild honey from the Mondulkiri area in Cambodia)
1 egg
1 vanilla bean or 1 teaspoon of vanilla extract
1½ cups whole wheat flour (or all purpose)
2 teaspoons of baking powder
1 teaspoon of ground cinnamon
½ teaspoon of ground nutmeg
½ teaspoon of salt

Method

Preheat the oven to 350°F (175°C). Coat a muffin tray with some butter.

Mix the mashed bananas, the Thnot Organic Palm Sugar, the honey, the inside of the vanilla bean and the egg. In another bowl, mix together the flour, the baking powder, the salt and the ground cinnamon. Stir this mix into the first bowl. Transfer to the muffin tray.

Bake in the oven until lightly brown (usually around 15 minutes). Enjoy while still warm.

Banana Daiquiri

A banana daiquiri made with Jaya palm spirit.

60ml Jaya Palm Spirit
15ml Cointreau
15ml lime juice
1/2 medium size banana

Method

Peel and roughly chop the banana.
Add the banana, Jaya Palm Spirit, Cointreau, lime juice and a handful of ice to a blender.
Blend until smooth and frothy.
Pour into a chilled glass and serve immediately.

Method

Place the mint leaves and Thnot palm syrup in the bottom of a glass and gently muddle to release the mint's aroma.
Add the KEM Probiotics and lemon juice, and stir to combine.
Fill the glass with ice cubes.
Stir once more and garnish with a fresh mint sprig before serving.

Method

Cook the garlic and chili paste until fragrant. Add the pork belly and prahok powder and mix well. Taste, then add the coconut milk and cook everything in the pan over low heat.

  • Cooked white rice, 220g
  • Eggs, 2
  • Prahok Powder, 10g
  • Red peppers, 0.5g
  • Tomatoes, 0.5g

Method

Heat oil in a skillet pan over medium-high heat. Add the onion, red pepper, tomato and green pepper. Cook for about 5 minutes, until softened. Whisk together eggs and prahok in a small bowl. Pour this mixture into the pan and cook for 2 minutes with the cooked white rice, stirring occasionally, until the eggs are scrambled and cooked through. Season with salt and pepper to taste. Serve immediately with rice.

  • Beef for lok lak, 130g
  • Salt, 0.2g

  • Oyster sauce, 0.5g

Method

  1. Heat a large skillet over medium heat. Add the oil and garlic and cook for about 1 minute. Add the beef and cook until seared on all sides. Add the remaining ingredients (soy sauce, oyster sauce, lime juice and black pepper) and cook until the beef is cooked through and the sauce has thickened.
  2. Remove the beef from the pan and set aside. Add the chopped spring onions to the pan and cook for 1 minute.
  3. Cook the fried egg in a separate pan. Spread the lok lak around the prahok rice on the plate (see the Prahok Fried Rice recipe).

Pizza Prahok

Pizza Prahok

An Italian pizza base finished with mozzarella, tomato sauce and Kirum Prahok Powder.

Ingredients

  • Pizza dough, 300g
  • Mozzarella cheese, 150g
  • Tomato sauce, 100g
  • Prahok light powder, 20g
  • Green pepper marinade, 0.3g
  • Italian basil, 0.3g

Method

  1. Prepare the pizza dough. Roll it out into a round shape and bake at 300 degrees for 4 to 5 minutes, or until the crust is golden brown.
  2. Spread 100 grams of tomato sauce on the pizza dough.
  3. Mix mozzarella cheese, prahok powder and pickled green peppercorns. Sprinkle the mixture over the tomato sauce.
  4. Cook the pizza for 5 minutes, or until the cheese is melted and bubbling.
  5. Remove the pizza from the oven and let it cool for a few minutes before cutting and serving. Garnish with fresh basil leaves, if desired.

  1. Mix all ingredients in a bowl.

Eggplant Caviar with Prahok

Eggplant Caviar with Prahok

Grilled eggplant finished with Kirum Prahok Powder and sweet basil, spread on bread and topped with caviar pearls.

  • Prahok regular powder, 1 tablespoon
  • Grilled eggplant, 1kg
  • Lime and pepper sauce, 10g

Method

  1. Grill the eggplant until the skin is blackened and the flesh is tender. Remove the skin and chop the flesh. Drain the eggplant in a colander to remove any excess moisture. Brown the eggplant with a little oil and a squeeze of lime juice. Season with pepper to taste.
  2. Heat a skillet over medium heat. Add a small amount of oil, then add the eggplant and cook until the water has evaporated.
  3. Add prahok powder and sweet basil to the pan and cook until fragrant. Spread the eggplant mixture on a piece of bread. Garnish with caviar pearls.

  • Prahok strong powder, 50g

Method

Boiling water: mix sodium alginate and salt in cold water until dissolved, then add the natural coloring. Cold water: mix anhydrous calcium chloride in 1L of cold water. Caviar: mix pepper, prahok and fish sauce, then marinate the caviar.
