Kampot Pepper

Kampot Pepper, Kampot Province

In southern Cambodia, Kampot Pepper grows where abundant tropical rain meets the naturally draining hills and foothills of Kampot and Kep. Farmers raise the soil, manage shade and harvest each berry according to ripeness, creating green, black, red and white expressions with distinctive citrus, floral, fruity, mint and lime notes. Confirel brings this protected terroir to market through its Kirum range, with careful selection, traceability and respect for the PGI tradition.

The Kampot Terroir

Kampot Pepper draws its identity from a defined growing area in southern Cambodia, covering designated districts of Kampot and Kep. Its character reflects the local environment, cultivation practices and careful post-harvest preparation — this is not simply pepper carrying a Cambodian label, but a terroir spice whose value depends on origin, traceability and the knowledge of the producers who grow, harvest and prepare it.

Annual rainfall here exceeds 2,000 millimetres, yet pepper vines thrive because many plots lie on elevated ground and mountain foothills where water drains readily. Generations of growers reinforce this natural advantage by raising the soil, maintaining canals, renewing the root zone and shading young vines.

Only the authorized Kamchay and Lampong, or Belantoeung, types of Piper nigrum may enter the protected chain. The berry's moment of harvest and its processing create four classic expressions: green pepper is fresh, citrus-led and lively; black pepper develops deep floral, eucalyptus and mint notes with progressive heat; fully ripe red pepper is rounder, sweeter and fruitier; and white pepper, produced after soaking ripe berries, reveals fresh grass and lime.

From Reputation to Protection

The geographical-indication framework links Kampot Pepper to a defined origin, recognised production rules and independent controls. For Confirel, this provides a disciplined way to distinguish Kampot Pepper, organic Kampot Pepper and products made with this protected ingredient.

Under the Kirum name, Confirel cultivates and selects Kampot Pepper and develops whole, ground and value-added products for Cambodian and international kitchens. Every PGI claim preserves the connection between registered producers, origin-area processing, quality controls and batch labelling — it is this alliance of rain, drainage, ripeness and human care, not geography alone, that gives Kampot Pepper its enduring identity.
