The Kampot Terroir

Kampot Pepper draws its identity from a defined growing area in southern Cambodia, covering designated districts of Kampot and Kep. Its character reflects the local environment, cultivation practices and careful post-harvest preparation — this is not simply pepper carrying a Cambodian label, but a terroir spice whose value depends on origin, traceability and the knowledge of the producers who grow, harvest and prepare it.

Annual rainfall here exceeds 2,000 millimetres, yet pepper vines thrive because many plots lie on elevated ground and mountain foothills where water drains readily. Generations of growers reinforce this natural advantage by raising the soil, maintaining canals, renewing the root zone and shading young vines — cultivation knowledge passed down as carefully as the land itself.

From Reputation to Protection

Kampot Pepper's reputation for quality predates any formal recognition — it is why the name needed protecting in the first place. That reputation now has legal standing: Kampot Pepper was recognised as a Geographical Indication in Cambodia in 2010, and registered as a Protected Geographical Indication (PGI) in the European Union in 2016.

A Geographical Indication is a quality label for products whose distinctive character or reputation is essentially attributable to where they come from. For Kampot Pepper, that means the name itself is protected: only pepper grown within the designated Kampot and Kep districts, following the registered specification and subject to controls under Cambodia's Ministry of Commerce and certification by an accredited independent body, may carry it. It is this framework, not geography alone, that distinguishes genuine Kampot Pepper from pepper that merely claims the name.

From Vine to Pepper

Only the authorized Kamchay and Lampong, or Belantoeung, varieties of Piper nigrum may enter the protected chain. Within those varieties, the moment of harvest and the method of processing — not a different plant — create Kampot Pepper's four classic expressions. Green pepper is picked underripe and prepared fresh, for a citrus-led, lively character. Black pepper is harvested slightly riper and dried whole, developing deep floral, eucalyptus and mint notes with progressive heat. Fully ripe red pepper is rounder, sweeter and more fruity. White pepper is produced by soaking fully ripe berries and removing the outer skin, revealing fresh grass and lime notes underneath.

Across every expression, the terroir carries through as aromatic intensity and a progressive, balanced heat — pungent without burning — that chefs recognise whether the pepper is used raw or cooked.
